CERASUOLO COLLEMAGGIO 750 ML Cellar TORRE ZAMBRA Grape: Montepulciano d'Abruzzo. Alcohol content: The vineyards are located on the Colle Maggio hill in Villamagna, about 180 meters above sea level, with a perfect southern exposure. The cultivation system used is the Abruzzo pergola, with yields per hectare around 120 quintals. Once harvested, the bunches are put in contact with dry ice, which causes a sudden drop in temperature and allows the preservation of the aromas naturally contained in the grapes. In the cellar the vinification continues cold, like a white wine, with soft pressing of the skins, separated after 8 hours from the musts to obtain the typical cherry color from which the wine; a short fermentation at controlled temperature follows. The perfect taste-olfactory correspondence suggests a combination with a wide range of dishes ranging from aperitifs to pizza and from fish to meat; to try with raw fish dishes and delicate fish first courses.
