Artichokes in oil is one of the most popular among preserves recipes in Southern Italy. It is prepared by cleaning the fresh artichokes and putting them in a vinegar, water and lemon solution for a while. Then they are boiled for a few minutes, and placed in glass jars with mint, garlic, salt and of course EVO oil. They are perfect consumed as a quick starter with friends.
Store (unopened) in a cool, dry place. Once opened, keep in the fridge.
