This tasty tuna gets stored in the cool store immediately after being caught off Sicilian and Calabrian coasts; cut into slices, rinsed in running water, placed in AISI 316 stainless steel baskets and cooked solely in water and salt in order to keep its organoleptic qualities and proteins intact. Then gets cooled down and, completely by hand, meticulously peeled and deboned. The clean slices are finally cut into fillets and placed into glass jars of different sizes, or in large cans for catering use. This phase is followed by filling them with water (for natural tuna), olive oil, or with premium EVO oil from olive trees lying on the slopes of Mount Etna (Nocellara Etnea cultivar). Capping is performed by an automatic machine, followed by jar sterilization and rinsing.
Very appreciated for its quality and versatility, gives its best with first courses but also when eaten on its own. Even as an appetizer, paired with our appetizer product range and aperitif wines.
